Easy PB&J Protein Waffles

Sometimes thinking of new meal ideas can be overwhelming, especially when attempting to stay on track with your health. In the hustle and bustle that mornings have become, I usually like to stick to what's simple and easy for my breakfasts. This is generally some combination of oats and fruit, or wholemeal toast with an array of toppings. But every once in a while I like to get creative and adhere to my cravings for old favorites like some good ol' waffles, or the classic PB&J. Or what about... both? I personally am quite the peanut butter fanatic, and so on a lazy sunday morning when a craving for waffles struck, I naturally opted to create my own recipe for some healthy, high protein, peanut butter and jelly waffles. And I was very happy with what I came up with! With a little tweaking, they turned out to be the perfect combination of fluffy, crunchy, and peanut butter-y. They are a perfect healthy spin on any boring breakfast routine! Read closely, because it's peanut butter jelly time, people.

Ingredients for waffles (made one decent sized waffle, or could be made into two smaller waffles):

1/3 c whole wheat flour

46 grams (or about 2 small) egg whites

1/4 scoop whey protein powder (I used Iso-100 Birthday Cake flavor)

1/8 tsp baking powder

Sweetener of choice to taste


2 Tbsp PB2 (can use regular peanut butter if you prefer)

Frozen strawberries


Mix the flour, protein powder, and baking powder in medium sized bowl. Add egg whites and sweetener and mix, adding water until consistency is similar to that of pancake batter. Lightly spray your waffle iron if needed with non-stick cooking spray and cook your waffle(s) on medium setting until that light turns green!

While waiting for the waffle to cook, you can heat up the strawberries in the microwave for 20-30 seconds until warm and mushy.

Once the waffles are done, top with peanut butter and strawberries and voila! A beautiful, filling, and creative breakfast to break up the routine!

I added Sugar Free maple syrup and chocolate chips for an extra kick in the sweet tooth, but you can feel free to add whatever other toppings you wish!
