It's no secret that I am a lover of new kitchen creations. One thing I hate, however, is spending a ridiculous amount of time and/or money on trying a new recipe, only to have it not turn out. In fact, if something I am making requires more than 30-45 minutes to make (not including cooking time), I will usually stop half way through and come back to it later (or not... so it's best to keep it short and simple). This is way I am such a lover of recipes with minimal ingredients, minimal steps, and simple instructions.
For someone like me, who has a seemingly unbeatable sweet tooth, baked goods are always a go to. Banana bread has always been a favorite of mine, and I like it so much that I usually will allow myself a little wiggle room with my diet to allow for a slice... or two or three. Okay, I just get really excited over some banana bread. The only problem is, baked goods usually take so much time and preparation! Anyone with me here? Or maybe I'm just lazy... either way, this banana bread recipe is one of my favorite ways to use up some extra bananas, satisfy my sweet tooth, and keep my eating habits in check. And I don't even have to spend hours in the kitchen or my whole paycheck on ingredients that I don't have! I can usually find everything I need for this banana bread in my cupboards, or find it easily and for a small cost at the local grocery store. But it gets better... the best part about this bread is that it's fat and added sugar free! Wait... Is this real life?
Yes it is, people, and here's the award winning recipe! (Okay, maybe it has only won awards in my head, but that's good enough for me!).
I love to pair any type of baked breads or goodies with a smoothie for sweet tooth satisfaction
1 medium sized ripe banana
1/4 cup canned pumpkin (unsweetened applesauce also works well)
1/2 cup sweetener of choice (I use sugar free syrup or Stevia sugar free baking blend)
2 egg whites
1 1/4 cup whole wheat flour
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
cinnamon to taste (optional)
Introducing the simplest banana bread instructions ever:
1) mix all ingredients together in a bowl
2) Pour batter into a greased or non-stick 9x5 bread pan
3) Bake at 325 degrees for 30-40 minutes (or until toothpick comes out clean)
4) Boom! Easiest, healthiest, banana bread ever, ready for you to devour (although I would recomment waiting for it to cool for safety reasons)
